A whole 130g burrata goes into the oven on top of spaghetti tossed in tomato sugo. Golden outside, still liquid inside. Around it, confit cherry tomatoes, parmesan and fresh basil.
The moment is breaking the burrata at the table and letting the cream run through the hot pasta. Tomato sauce, fresh cheese and basil, nothing else. A light red with good acidity alongside finishes it.
